The cabin crew and flight deck crew give no indication as to how high we are flying…..and on KLM cannot I unearth a word that is being said to the passengers.

Go to wikipedia and check the aircraft used by the airline, then check their specs.
Airlines are regulated as to the maximum service height they can fly. You can find that on Wiki too.

If TSA approves me to start flying but the school doesnt issue I-20′s to get a visa to leave my home country, then how do i go about leaving without a visa or is the approval from TSA enough?.

you have to resolve the issues with school. why they dont give you I 20? thats where you need to start. and NO, dont go. you will mess everything up. just get it done first.
