what is the punishment for using unlisted aviation parts? eg: without their paperwork and fitted to aircraft.

Using unapproved parts or parts without an FAA Form 8130 can land you a large fine from the FAA when your local PMI does an inspection. Not to mention being required to ground the aircraft and replace the unapproved part. All parts are required to be certified by an approved Vendor or Repair Station that has a license from the FAA.
