3D means stunts and tricks. Since the helicopter isn’t flying around like how a real helicopter would, it is called 3D (ie. upside down, on it’s tail, etc.) 3 ch (3 channels) means you have control over 3 of the helicopters axis- so you could go up/down, slide left/right, and spin left/right. 4 ch means you can control 4 of it’s axis- up/down, slide left/right, spin left/right, and move forwards/back. Any more channels can be used to control extra functions (dropping a bomb, for example.)

They change the pitch (angle of attack) to control how much lift and which direction the lift is in. The squash plate influences this to allow the lift to be uneven from around different areas of the circle that the blades roate. This means the blades are changing pitch very fast, but allows incredible control. hth.
