The cabin crew and flight deck crew give no indication as to how high we are flying…..and on KLM cannot I unearth a word that is being said to the passengers.
Go to wikipedia and check the aircraft used by the airline, then check their specs.
Airlines are regulated as to the maximum service height they can fly. You can find that on Wiki too.

For example over the north atlantic east bound aircraft utilize the jetstream airflow in the 20,000s and westbound go above or below (flying into the stream uses lots of extra fuel). The international body for air traffic (iata??) governs such things.
